This study aimed to determine differences in water content before and afterstoragestoragestoragestorage storagestorage fried chicken for three days in one of the fast food restaurants and are sold roadside Banjarbaru area. This type of research is the experiment, with the design of one group pretest-posttest, population is fried chicken sold at fast-food restaurants and fried chicken are sold alongside a road. Ie samples fried chicken 8 units taken from restaurant and fast food are sold alongside a road with four chickens each. How to capture using purposive sampling. Processing of the data is tabulated and analyzed by simple regression analysis. Results before storage moisture content in fried chicken fast-food restaurant after saved 38.73% and 70.45%. For fried chicken that is sold alongside a road before storage of 48.25% and 80.06% after stored. Storage first and second day on the water content of fried chicken fast-food restaurant still meet standards. And fried chicken are sold roadside water content on the second day and the third did not meet the standard of SNI 01-3924-2009 Chicken has a water content of 68% -75%. For the seller, you should pay attention to the fire at the moment because the great fire concoction concoctionconcoction concoction concoctionconcoctionconcoction would make fried chicken is not cooked completely because the water content is less absorbed by the oil.
